Cava made with organic grapes. The personality of Alta Alella cavas is reinforced in this cava by the use of our most original variety, Mataró (the name of the capital of the Maresme region).
After a 10-hour cold maceration to obtain the desired colour, the grapes are lightly pressed to obtain the free-run juice, which is fermented at a controlled temperature of 15ºC in stainless steel tanks. After a strict application of the traditional method and a minimum ageing period of 36 months, the wine is sold freshly disgorged.
A very rainy spring gave the vines exceptional vigour and resulted in slightly higher yields than in previous years.
Our vineyard, free of mildew, and a dry, hot July led to an early harvest with exceptional health for the base of the cava.
From mid-August onwards, abundant rainfall, mild temperatures and few hours of sunshine slowed down the ripening process and made it difficult for the grapes to ripen. A slower, more difficult and irregular ripening, which required the selection and separation of the grapes both in the vineyard and in the cellar. However, thanks to the reduced rainfall and increased sunshine hours from mid-September onwards, the grapes were able to ripen more slowly, with greater difficulty and irregularity. As a result of the climatic conditions described above, more aromatic white wines with lower alcohol content and less structured but fresher red wines are obtained. A more Atlantic than Mediterranean vintage.
Appearance - The colour varies according to the vintage, from strawberry to brick red.
Nose - Aromas of violets and red fruits, typical of the Mataró grape variety, with an undertone of almonds, the fruit of long bottle ageing.
Palate - Fine bubbles with a fine passage through the mouth, recalling the aromas of red fruits and the aromas of the long ageing in the bottle. Pronounced minerality and salinity.
Very tasty and persistent.
